“What to eat? There is nothing left in the fridge!” Tired from the day's work, we all know those evenings when our creativity is at a standstill. But BINGO, we found the solution! If you have flour, water and an egg, you can make savoury pancakes and fill them with leftovers from your fridge. Let us show you 👇

Difficulty: Easy

Budget:

Preparation time: 10 min

Cooking time: 10 min

For 5 people, what do you need?

170 g buckwheat flour
5 g coarse salt
375 ml cold water
2 eggs
Ham
Emmental cheese
Preparation:
  • Mix the flour and coarse salt in a bowl, pour in the water and gently stir the mixture.
  • Add one egg to this smooth, thick batter.
  • In a hot pan, pour a teaspoon of olive oil or coconut fat and a ladleful of batter.
  • Once browned on each side, place a slice of ham on top and spread a small amount of Emmental cheese.
  • Crack an egg into another pan and place on top. Add salt and pepper.
  • Let them melt for a few moments and then enjoy them with a good wheat salad, some nuts or a vegetable soup.

You can also garnish them with leeks that you have previously melted in a pan. Mushrooms are also a good choice. In this case, brown a pressed clove of garlic in a little olive oil. Chop the mushrooms and leeks and toss them in the pan. Add parsley, salt and pepper and towards the end of cooking add a dash of crème fraiche.
