Easy as pie? Three savoury pies, all yours to discover!

Savoury pies with bacon are tasty of course, but a little boring maybe. Here are three creative recipes that we have carefully prepared especially for you. Ready to surprise your guests with these unique and somewhat unusual dishes?

What's great about pies is that they're foolproof of course, but they also allows for endless possibilities and combinations. That makes them a beloved dish of all chefs, from amateurs to master chefs! Ready to get cooking? We promise it's easy as pie!

The perfect base for all your savoury pies: 

  1. Put 150 g of flour of your choice, 1 sachet of baking powder, a pinch of salt and pepper into a bowl. Mix this gently with three eggs, 80 ml of vegetable oil (nut, sunflower, olive oil, etc.), 145 ml of warm milk and any seasonings of your choice (see suggestions below).
  2. Pour the mixture into a buttered cake or pie tin.
  3. For each recipe, first preheat the oven, prepare your pastry and put the base filled with your creative pie fillings in the oven for 40 minutes to 1 hour at 180 °C.

Country-style bread! 🚜

Beetroot, seeds and goat cheese

This recipe is both unusual and a nod to grandma's country-style cuisine. Healthy, fresh and tasty.

Ingredients

  • The base for the pie (see above)
  • 50 g of rolled oats
  • A handful of fresh thyme
  • 50 g pumpkin seeds
  • 2 tbsp caraway seeds
  • 2 tbsp black cumin seeds
  • 2 raw beetroot, peeled and finely grated
  • 1 tbsp honey
  • 20 g grated Parmesan cheese
  • 120 g goat's cheese, cut into 2 cm pieces
  • Salt

Method

  1. In a bowl, mix the oats, thyme, pumpkin seeds, black cumin seeds and caraway seeds.
  2. Add the grated beetroot and the oatmeal/seed mixture. Set aside 1 tbsp to sprinkle it over the pie before you bake it.
  3. Add the honey, Parmesan and goat's cheese to the pie base. Try to make the mixture smooth but don't crush all the ingredients.
  4. Sprinkle the pie with the remaining seed mixture and bake it for 40 minutes at 180 °C.
  5. Check whether the pie is cooked and if necessary, cover with aluminium foil and continue baking for another 40 minutes.

A tasty cauliflower log! 🥬

Cauliflower log pie

Cauliflower is often underestimated. Yet it can be used in all kinds of sauces, and even in pies. Follow the chef... This recipe is inspired by the famous chef Yotam Ottolenghi.

Ingredients

  • 1 medium-sized cauliflower
  • 1 large red onion, peeled
  • 100 ml olive oil
  • ½ tsp fresh rosemary, chopped
  • 10 medium-sized free-range eggs
  • A handful of fresh basil, chopped
  • ½ tsp ground turmeric
  • 220 g grated Parmesan cheese
  • salt and black pepper
  • 2 tbsp black sesame seeds (or black onion seeds or ordinary sesame seeds)

Method

  1. Add the turmeric, Parmesan, sesame seeds and black pepper to your pie base.
  2. Chop the cauliflower into medium-sized florets, put them in a saucepan with a teaspoon of salt, cover with water and simmer for 15 minutes, until tender. Drain.
  3. Heat the oil in a pan and fry the chopped onion and rosemary for a few minutes on low heat. Allow this mixture to cool and add it to your pie base, along with the fresh basil.
  4. Add the cauliflower and stir gently, trying to keep some of the florets whole.
  5. Arrange the sliced onion rings on top and sprinkle with the sesame seeds.
  6. Bake for 45 minutes.

Garlicky goodness! 🧄🧄🧄

Caramelised garlic pie

A delicious combination of ricotta, goat's cheese and caramelised garlic cloves. And no need to worry about garlic breath!

Ingredients

  • The base for the pie (see above)
  • 120 g ricotta cheese
  • 120 g hard goat's cheese
  • 3 medium-sized heads of garlic
  • 2 tbsp vegetable oil
  • 1 tsp balsamic vinegar
  • 1 cup water
  • ¾ tbsp sugar
  • 1 tsp fresh rosemary
  • 1 tsp fresh thyme

Preparation of the caramelised garlic cloves:

  1. Boil the garlic cloves in plenty of water and blanch them for 3 minutes.
  2. Drain them well!
  3. Empty and dry the pan and fry the garlic cloves in two tablespoons of olive oil. Add the balsamic vinegar and water, and bring to the boil, then simmer gently for 10 minutes.
  4. Add the sugar, rosemary, chopped thyme and 1/4 teaspoon of salt. Continue to simmer over medium heat until most of the liquid has evaporated and the garlic cloves are coated with a dark caramel syrup. Set aside.
