Broccoli and leek soup 🥣

Ingredients for 4 persons
1 broccoli
1 leek
1 potato
1 l poultry broth
1 onion
Whipping cream
A few parsley leaves
Salted butter
Salt
Pepper
Method
- Rinse the broccoli and cut it into small pieces.
- Trim the ends of the leek, wash it and cut it into rings.
- Peel, wash and cut the potato into cubes.
- Melt a little butter in a saucepan. Chop the onion and fry it.
- Add the leek, broccoli and potato pieces.
- Pour in the broth so that it covers your vegetables and let simmer for about 30 minutes. Check the vegetables from time to time. As soon as they are tender, you can turn off the heat.
- Remove the pan from the heat and blend the mixture.
- Season with salt and pepper.
- Pour the soup into a bowl, add a few parsley leaves and a dash of whipping cream.

! Tip ! To get the most out of this soup, do not overcook the vegetables. As soon as they are soft, the soup is ready to be blended.
